In the spirit of giving up spirits, and because I have a thriving new mint plant and limes in the fridge, I decided to put together a Paleo Mojito. OK, OK, it’s just a fancy way of saying that I muddled mint and limes and poured seltzer over it. But still, doesn’t it look refreshing and yummy?
Breakfast: crispy pork loin (from crockpot pork) with coconut oil, an egg, kale, 1/2 avocado; whipped espresso (with almond milk and coconut oil)
Lunch: Beef with carne asada spices sauteed in coconut oil, romaine, tomato, 1/2 avocado; chicken broth
Dinner (at restaurant): Spinach salad with egg and bacon, oil and balsamic vinegar, few bites of hamburger, few sauteed brussel sprouts
