I’ve figured out one of the solutions to being on the road – extended stay-type suites! I’m in NC for the week, and decided to stay at a Homewood Suites.  I have a full fridge/freezer, kitchen with stove and microwave, pots and pans, etc.  I ran over to the grocery store this morning to pick up cage-free eggs, organic frozen spinach, and a small bottle of olive oil; and made a spinach scramble for breakfast.  I’d also brought other food with me in a cooler bag from NYC (since I was driving), and then picked up some prosciutto, beef jerky, a smoked pork chop, and red kraut from Dietrich’s Meats on the drive down. PERFECT! Besides, other than the fact that I am not eating the “free” breakfast they serve, I’m definitely saving the company money. 🙂

Today’s food:

Breakfast: 2 eggs, spinach, nutritional yeast, black coffee

Lunch: Newk’s salad with grilled shrimp, tomato, egg, olive oil, vinegar, hot sauce, giardenella

Snack: Lara cashew cookie bar, cashews and almonds

Dinner: MacAllister’s Deli taco salad (lettuce, tomato, jalapenos, onions,guacamole, beef only chili)

  1. I’m finding this incredibly interesting to follow. One thing I’ve been wondering – why nutritional yeast? I can’t understand how that fits into the paleo thing. And how do you use it exactly?

    • Hey Jess,
      Nutritional yeast is definitely not something that is for the paleo part (in fact, it is most often used by vegans who are trying to up their Niacin and B-Complex vitamins). But it lends a bit of a cheesy taste to things (as well as extra protein and fiber with very few calories or fat), so I like to put it on eggs and veggies and stuff – especially since I can’t have cheese this month, which is one of my FAVE foods.
